10.3g net carbohydrates
1 tsp coconut oil 2-3 cloves of garlic, finely chopped 1 red onion finely chopped 1 red pepper finely chopped
100g lardons or pancetta 400g beef mince
200ml beef bone stock (or red wine) 1x 400g tin chopped tomatoes 2-3 tsp tomato paste 75g mushrooms, chopped
2 tsp dried oregano
1 tsp paprika
1/2 tsp onion granules black pepper
Add the coconut oil to a sauté pan. Fry onion until soft and translucent.
Add the garlic and peppers and cook for another couple of minutes
Add lardons and mince and cook until brown. Add the stock or wine and cook for 2 more minutes.
Add chopped tinned tomatoes. Stir well. Add the mushrooms, herbs and season with black pepper. Leave to simmer very gently for 15 minutes.
Serve of a bed of courgette spaghetti.
